WHere is a simplified interpretation of a drink from a new drinks list. It's a batch pre-mixed that's bursting with essence of the Christmas time, rendering it ideal for hosting a holiday party. Save the extra citrus syrup you can use for morning drinks, desserts, or for more rounds of bikinis.
Bikini Recipe
Serves 10 servings
Ingredients for the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Premix (yields 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Directions
For the Citrus Syrup: Place the listed components inside a pot, heat until it reaches a simmer, agitating so the sugar melts. After that, turn off the stove and let it to cool entirely. Decant into a sterilised bottle, seal keeping it in the fridge, where it will keep for about one month.
For the Batch Mix: Combine every liquids in a large bottle, let it rest for an hour, then strain preferably using cheesecloth, to ensure it's fully clarified.
When ready to serve: Add 85ml of your batch mix into your stirring glass containing ice, and agitate carefully for one minute to cool it down. Strain into an frosted cocktail glass or equivalent, top with the cranberries and finish with a light spray with the mandarin essence over the drink.
